VEGGIE SAMOSAS/ curried sweet potato & spinach
Oh. My. Gosh. Hells to the YUM!
These simple vegan samosas are made with a little twist - or perhaps a little Greek - in this case your filling wrap is phyllo pastry:)
You can totally wing it and get creative with the filling (peas, kale, carrots, coconut...)
Here’s what I did:
-Sauté onion, garlic and ginger, salt & pepper, graham masala seasoning and one drop doterra coriander and or cardamom essential oil (food grade)
-Steam two large sweet potato , chopped into cubes, till soft (not mushy!)
-add 2 cups of spinach to sauté, till wilted, then combine sweet potato and set aside to cool
-spread out two sheets of phyllo pastry and brush with olive oil, place one sheet on top of the other. Should look like a big rectangle. Cut pastry in half lengthwise.
-add a scoop of the veggie curry to the top corner of one strip and make your first fold into a little triangle. Repeat process till you’ve got your first triangle. Move on to the next sheet.
-bake at 360* for 25-35 min
- you should be able to make aprox 6 large size samosas
